 Luis
Eduardo Guillén, Proprietor
After over 15 years
as a Project Manager in the Construction and Environmental
Consulting fields, Luis purchased New
City at the end of 2003, fulfilling a long time dream.
Luis, who is also a member of the Latin band “Son Venezuela”,
believes food and music are the two strongest elements that give
a culture its identity. And although his role in Latin American
music
and food could be seen as a tribute to his roots, Luis says
it
is simply what he knows.
“Your heritage is what you are. It’s simply easier, if you cook,
to cook what you've eaten all your
life.
And it’s easier to play the music you’ve danced to all your life.
So it’s not paying homage to those traditions so much as just
doing what I know and love.”
Luis is the Executive Chef and General Manager of New City. His wife
Marisol, an Early Childhood Special Education
Teacher for the Topeka Public Schools, also spends several
hours a week helping Luis at New City. Together they
have four children: Luis Alejandro, Gabriella, Andrés,
and Alyssa.

Martínez
Augie has been making restaurant customers smile for over 15 years
– 7 of which he was the General Manager at one of Topeka’s best-loved fine dining
restaurants, JJ’s
Bistro.
As
a member of New City’s management team, Augie’s
personal style and professional experience, as well as his
enthusiasm and knowledge of Topeka’s fine dining clientele,
are a great addition to New City.
Augie would like to offer a personal invitation to his friends
and former customers to visit New City and discover the ultimate
dining experience for themselves.
